The youtube pro I've watched is Vancouver Carpenter. He does a ton of drywall work, and explains it pretty well.

I assume you will not be using quick set mud for the taping, right?

Also, it is my understanding that quick set is a chemical cure, not an evaporation cure, so it can be top coated quickly and doesn't shrink. You might have bene able to plow ahead with the taping if you'd wanted. That stuff really does cure in a hurry!
